Pumpkin Spice Oatmeal

While pumpkin has the rep to be just a white-girl thing, it's actually a great source of beta-carotene (a carotenoid that the body turns into Vitamin A - and it's also why the pumpkin is orange hehe), antioxidants (which fight free-radicals in the body), and Vitamin C (which helps strengthen your immune system)!

Whether it’s fall and you’re trying to get in the fall spirit, or you pick up a can of pumpkin from the store and feel like doing something new with your oatmeal - try this pumpkin spice oatmeal to spice (haha see what I did there?) up your breakfast!


Recipe

Ingredients:

  • 1/4 cup oatmeal

  • 1/4 cup almond milk or any milk of your choice

  • 1/4 cup pumpkin puree

  • Sprinkle of cinnamon & nutmeg

  • 50g of greek yogurt (or coconut yogurt if vegan/dairy-free)

  • 1 tbsp natural peanut butter

Toppings:

  • granola

  • almonds

  • fruits of your choice

Instructions:

  1. First, add the oats and the almond milk to the pot. Use just enough almond milk to cover the oats, but not enough so that they get soggy. I usually place a lid on my oats and leave them on the highest heat for just under a minute.

  2. Then go and stir them, remove the lid, and lower the heat to medium. Add in the pumpkin puree.

  3. Keep on stirring them and leave them on for about another minute to thicken up

  4. After placing the oatmeal into a bowl, mix in the greek yogurt and peanut butter (I know Greek yogurt may seem like a weird addition, but trust me on this one - the creaminess is heavenly)

  5. Lastly add the toppings! I topped it with my homemade granola and some almonds. Enjoy! 😊
