Golden Beet and Bee Pollen Salad

Golden beets are nutrient powerhouses! Their orange colour is given by anti-inflammatory and antioxidant pigments called betaxanthins, which help reduce inflammation in the body and fight free radicals! On top of that, beets also contain plenty of fibre, magnesium, potassium and vitamin C! They can be eaten raw, boiled or baked. I had never tried beets raw before so I decided to use them raw in this salad, and I really liked how crisp and crunchy they were. But if you prefer boiled beets, then feel free to boil them!

I was tired of my usual salads, so I decided to be a little adventurous and make this golden beet and bee pollen salad! My mom and I went to the farmer’s marker this weekend and I decided to be adventurous and buy some golden beets! Then when I was making the salad my mom suggested adding some bee pollen into the salad and it turned out to be delicious!


Recipe

Serving size: 4-6 servings

Ingredients:

  • 1 bunch golden beets

  • 1 Granny Smith Apple (I like buying my apples organic)

  • handful of grape tomatoes (I get these organic too)

  • spring mix

  • olive oil

  • balsamic vinegar

  • bee pollen

  • chopped walnuts

Instructions:

  1. Dice up the beets, grape tomatoes, and granny smith apple, and place on top of spring mix (like I said above, I just used raw beets, but feel free to boil them if you’d prefer that - boil time depends on size of beets but it’s usually anywhere from 40-60 minutes)

  2. Chop up some walnuts and add those on top

  3. Top salad with desired amount of olive oil and balsamic vinegar, and sprinkle with bee pollen

  4. Toss and enjoy! 😋
