Healthy Breakfast Cookies

I definitely am not an advocate for eating sugary desserts high in refined sugars or inflammatory oils (like donuts) for breakfast, but every once in a while a sweet treat is nice as a pre workout snack or alongside breakfast. But I can’t stress enough that the QUALITY of food and ingredients matters! Bananas, maple syrup and almond butter is very different from the white refined sugar & canola oil filled cookies that you’ll find in the store. Your body uses every single ingredient as its fuel, and your body’s fuel matters.

These cookies are so delicious and they’re refined sugar free, gluten-free and super easy to make! Sweetened with just banana & maple syrup and packed with healthy fats, these cookies are a great healthy dessert or even a quick pre-workout snack or breakfast! The next time you have some ripe bananas sitting on your counter waiting to be used, be sure to give these a try!


Recipe

Ingredients:

  • 2 ripe bananas

  • 1 cup organic gluten-free oats

  • 1/4 cup organic nut butter of your choice

  • 1/4 cup hemp hearts

  • 1/4 cup chia seeds

  • 1/4 cup shredded coconut

  • 1/4 cup flax seeds

  • 1/4 cup chocolate chips (I love @hukitchen chocolate chips sweetened with dates)

  • 2 tbsp maple syrup

  • Sprinkle of cinnamon

  • Sprinkle of sea salt

 Instructions:

  1. Preheat oven to 400F

  2. In a big mixing bowl, mash up the 2 bananas

  3. Add the rest of the ingredients, mixing between each step

  4. Once everything is mixed, add cookie dough to a baking sheet (unless you want to just eat the dough raw, which I definitely have done haha). These don’t rise much so make them as little or big as you want! I made about 14

  5. Bake for 8-10 minutes and enjoy your healthy treat! 😊
