Healthy 3 Ingredient Pancakes

Instead of flour, these pancakes are made with oats! Apart from having a nice texture that I love, oats are rich in many vitamins and minerals! They're a good source of Manganese, Phosphorus, Magnesium, antioxidants, and soluble fibre. Oats are also a great source of fiber, and help keep you feeling full for longer!

This recipe honestly changes the game! This started off with me looking for healthy paleo pancakes, and finding that you can make them using just banana and eggs! Sadly they were a bit mushy and had more of an omelette texture than of pancakes. Next time I made them, I thought of adding oats to them and wow! These healthy pancakes are fluffy, moist, and super easy to make - and also gluten-free and refined sugar-free!


Recipe

Serving size: 4 small-medium pancakes

Ingredients:

  • 1 egg

  • 1 ripe banana

  • 1/4 cup oats

  • Dash of cinnamon

Toppings:

  • Greek yogurt

  • Natural Peanut butter (or another nut butter)

  • Strawberries

  • Blueberries

  • Blackberries

  • Any other fruit of your choice!

Instructions:

  1. I like to cut up my fruit that I'm going to use as toppings before I start making the pancakes so that the toppings are ready to go once my pancakes are finished cooking

  2. So cut up however many strawberries, banana, or whatever other fruit you'd like to top your pancakes with!

  3. Then, in a medium-sized bowl, mash up the banana with a fork

  4. Add the egg, oats, and a dash of cinnamon, and mix them all together with a fork

  5. Heat up a pan to medium heat, and oil it up with some coconut oil or butter.

  6. Once the pan is hot, use a spoon to place small dallops of the mixture onto the pan, keeping an eye on them so don't burn. Tip for easier flipping: make smaller pancakes so that they're easier to flip (I normally make about 4).

  7. After flipping them over and letting them sit for a little while longer, remove them from the pan

  8. Now here comes my favourite part: adding the toppings! Spread some Greek yogurt and peanut butter on each of them (I know this may sound weird, but trust me on this one: the best part about these pancakes is the creaminess that the Greek yogurt and peanut butter gives them)

  9. Then top with your choice of fruit! I usually like doing either berries, or bananas! Enjoy 😊
