Healthy Chocolate Banana Pancakes
Health Fun Fact
Raw cacao powder is actually really healthy!! The difference between cocoa vs. cacao is that cocoa is made from cacao beans that have been roasted at very high temperates, and thus lose a lot of their nutrients and minerals; whereas cacao powder is made from fermented cacao beans that have not been roasted.
Raw cacao powder is super high in flavanols, which are a type of antioxidant that fight free radicals in the body and help protect the body against oxidative damage. It's also high in fibre, protein, potassium, and magnesium!
These delicious and easy to make pancakes are super healthy, and made with only 4 simple ingredients (plus optional chocolate chips)! They’re paleo, gluten-free, refined sugar-free, and delicious!!
Recipe
Serving size: 4-5 pancakes
Ingredients:
1 ripe banana
1/4 cup gluten-free oats
1 egg
1 tsp raw cacao powder
1 tsp chocolate chips (or however many you want!)
Instructions:
In a bowl, mash the banana with a fork. Then add the rest of the ingredients and mix them all together
Before making the pancakes, I like to have my toppings already cut up so the pancakes don’t get cold once they’re ready! So wash and chop up whatever fruit you want, I used strawberries, blueberries, and blackberries
Heat a pan to medium heat and add a little coconut oil
Scoop the batter into 4 pancakes (plus the optional mini pancake if you have any leftover haha)
Keep them on for about 1-2 minutes, but keep an eye on them so they don’t burn
Flip them over, and keep them for about another minute
Once you remove the pancakes from the pan, it’s time for your toppings! Get creative and use whatever comes to mind! I topped mine with coconut yogurt, peanut butter, strawberries, blackberries, blueberries, and cacao nibs! Enjoy 😊
