Pesto Egg Toast & Banana Almond Butter Toast

When it comes to bread, quality and ingredients are SO important! Bread can be healthy if made from the proper ingredients, but unfortunately most breads are loaded with crap — seed/vegetable oils, preservatives, stabilizers, etc. When buying bread, the less ingredients there are, the better (that’s true for most things actually haha). The biggest thing I check for is to make sure that there’s no vegetable/seed oils (ie. sunflower, canola, safflower, rapeseed, etc.) as this is one of the most detrimental toxins you can put in your body. Try to look for either organic, sprouted (meaning the grains were properly soaked & prepared), or sourdough!
My fiancé actually used to run a toast business in college and his favourite toast that they sold had pesto and tomatoes, and that inspired me to recreate it for breakfast! I thought that adding an egg would also be delicious (and I was right hehe). This combo was sooo delicious I’ll definitely be making it again!
Recipe
Ingredients:
🍳 toast:
pesto (I’d recommend buying pesto that has as few ingredients as possible and contains olive oil instead of vegetable/canola oil)
grape tomatoes (organic)
egg (organic, free-range)
hemp hearts, paprika & black pepper
🍌 toast:
organic almond butter
banana
cacao nibs (adds a nice crunch and a good source of antioxidants and fibre)
