Pesto Scrambled Eggs

Although relatively high in calories, pesto is very healthy for you if made properly! I make sure to buy a pesto that contains extra-virgin olive oil instead of canola oil or sunflower oil, since extra virgin olive oil is a fantastic source of fat, whereas canola/sunflower oil are rancid fats that are made using toxic chemicals and is extremely detrimental to your health. I love adding pesto to my toast, scrambled eggs, or salad dressings!
These pesto scrambled eggs are such a simple way to change up your regular egg routine and SO delicious! Just add pesto to your scrambled eggs right before you take them out of the pan and mix it in!
Recipe
Ingredients:
baby tomatoes
roasted turkey breast (I like @applegate organic turkey breast)
turkey bacon (also like @applegate uncured organic turkey bacon)
eggs (preferably organic and pasture-raised)
coconut oil (organic, unrefined, cold-pressed)
mixed greens
Instructions:
Chop up some baby tomatoes and roasted turkey breast, and sauté them in coconut oil for a few minutes
Start cooking your turkey bacon in a separate pan
Whisk 2 eggs with a splash of milk or water (makes the eggs fluffier) and some black pepper
Add the eggs to the tomatoes and turkey, and keep on mixing it together in order to achieve that perfect egg fluffiness
When the eggs are almost done, add in a tablespoon of pesto, mix it in, and serve!
Add some mixed greens onto your plate, remove the turkey bacon from the pan, and you’re ready to go! Enjoy 🤍
