Chia Seed Overnight Oats

Chia seeds are a fantastic source of fat loaded with omega 3s, antioxidants and insoluble fibre (insoluble fibre helps regulate digestion). Oats a very healthy carb that are a great source of manganese, phosphorus, and a soluble fibre called beta glucan (soluble fibre stabilizes blood sugar levels and feeds the healthy gut bacteria). I definitely recommend buying organic oats if you can to ensure they’re not sprayed with pesticides!

You’ve heard of chia seed pudding, you’ve heard of overnight oats...but have you tried combining them?? It’s honestly sooo delicious! Super easy to make and prep the night before, and you can meal prep multiple jars so you have them for the whole week! Topped with fresh fruit, cacao nibs and refined sugar-free paleo granola, it makes for the perfect balanced breakfast


Recipe

Ingredients:

  • 2 tbsp chia seeds

  • 2 tbsp gluten-free oats

  • 1 cup organic whole milk or nut milk of your choice

  • dash of cinnamon

  • toppings of your choice, I used: strawberries, blueberries, blackberries, cacao nibs & Purely Elizabeth granola (the only granola I use! It has really clean ingredients)

Instructions:

  1. In a jar, mix together chia seeds, oats, nut milk and cinnamon. Stir with a spoon, then place in the fridge overnight

  2. The next day, top with desired fruits/nuts/seeds/nut butters/granola. Enjoy! 🤍
