Protein Breakfast Bowl

I'd highly recommend making your first meal of the day a protein-packed meal! It helps regulate your blood sugar levels through the day so that you don't experience sugar crashes and spikes in your insulin levels. Protein is also extremely satiating so it helps keep you fuller for longer. Also eating high amounts of protein helps maintain the muscle mass you have and helps in building new muscle!

This morning’s breakfast bowl was insanely good! Packed with protein from the eggs, chicken sausage and smoked salmon, and drizzled with a yogurt lemon dressing, this bowl was super delicious and a great way to get your greens in the morning! If you’re looking to change your breakfast up from the normal avocado toast or oatmeal be sure to try this out!!


Recipe

Ingredients:

  • Spinach & arugula mixed greens

  • Baby tomatoes

  • Organic chicken sausage (make sure to look for a brand that has natural ingredients and lower sodium - generally the fewer ingredients the better)

  • A few slices of smoked salmon

  • 1 egg

  • 1/4 avocado

  • Toppings: hemp hearts and everything but the bagel seasoning

Dressing:

  • 3-4 tbsp of Greek yogurt (I’m sure non-dairy yogurt would work well too)

  • 1 tbsp lemon juice

  • 1 tbsp apple cider vinegar

Note: feel free to play around with the quantities for this! I honestly just eyeballed everything haha, and if you don’t have apple cider vinegar you could use just lemon juice or vice versa!

Instructions:

  1. Cut up chicken sausage into small slices, and pan fry in butter/olive oil for 5-10 minutes

  2. Chop up baby tomatoes, and add mixed greens and tomatoes to a bowl

  3. Add smoked salmon slices and 1/4 avocado to bowl

  4. Coat a pan with some coconut oil and start frying the egg

  5. While the egg is frying mix together ingredients for the dressing

  6. Add the egg to the bowl, drizzle the dressing on top, sprinkle with some hemp hearts and everything but the bagel seasoning, and enjoy!! 💛
