Caramelized Apple Oatmeal

Granny Smith apples are a great source of fibre, vitamin C, antioxidants, and are relatively high in their water content!

Whenever I’m bored of my regular oatmeal and I want to change things up I always just caramelize whatever fruits I have lying around! It’s a great way to change things up, it tastes amazing, and it’s actually surprisingly simple to make! This morning’s oatmeal bowl had half a caramelized Granny Smith apple on top, and I mixed the other half in with the oatmeal!


Recipe

Ingredients:

Caramelized Apples:

  • 1/2 apple chopped up into small cubes

  • 1 tsp coconut oil

  • 1 tsp maple syrup


Oatmeal:

  • 1/4 cup quick oats (I like to buy organic & gluten-free)

  • 1/2 cup milk (either regular milk or nut milk will work)

  • dash of cinnamon

  • the other half of the apple (also chopped up into small cubes)

  • 1 tbsp almond butter

  • a few tbsp of coconut/greek yogurt

Instructions:

  1.  Heat up a pan to medium high heat, add the coconut oil and maple syrup, and let them heat up a little

  2. Cut up the apple into small cubes

  3. Add your oats, milk, half of the apple, and cinnamon into a pot. Bring to medium heat, cover, and stir every once in a while. Cook oats until desired consistency is reached (I like it when the oats have absorbed all the milk)

  4. Add the other half the apple slices to the pan and leave them for a few minutes. After a few minutes, flip all the apples over (make sure to keep on eye on them because they can burn quickly)

  5. Once your oatmeal has absorbed all the milk, transfer to a bowl and top with almond butter, and yogurt

  6. Remove caramelized apples from pan and add to your oatmeal! Enjoy 💛
