Pumpkin Oatmeal

I absolutely love fall and I love pumpkin season! Pumpkin is such a great ingredient to use in a variety of dishes, and oatmeal is no different! This pumpkin oatmeal is creamy, delicious, and super easy to make! Loaded with yogurt, nuts and seeds, this oatmeal is the perfect way to start your day!


Recipe

Ingredients:

  •  1/4 cup gluten-free oats

  • 1/4 cup pumpkin puree

  • Sprinkle of cinnamon

  • Sprinkle of nutmeg

  • ~1/2 cup milk (I like using either organic whole milk or almond milk)

  • ~1/2 cup water 

Toppings:

  • Coconut/greek yogurt

  • Chia seeds

  • Flax seeds

  • Hemp hearts

  • Bee pollen

  • Almonds

Instructions:

  1. Add the oats, pumpkin, nutmeg and cinnamon to a pot, and mix them around. Add equal parts of nut milk and water until youโ€™ve submerged the oats and pumpkin.

  2. Cook on medium for about 5 minutes, stirring frequently. Cook until itโ€™s a creamy consistency and all of the liquid has been absorbed.

  3.  After transferring to a bowl, mix in some yogurt of your choice

  4. Top with chia seeds, flax seeds, hemp hearts, bee pollen, and almonds! Enjoy ๐Ÿ’›
