Smoked Salmon and Beet Scrambled Eggs

Starting your day off without a spike in your blood sugar can be really beneficial if you’re someone who always craves snacks in between meals - not to say snacks are bad, but make sure you’re snacking because you’re actually hungry, not because you’re bored/thirsty/etc!
Also eggs and veggies are super nutritious and high in healthy fats, vitamins and minerals, so they’re a super healthy and easy option to have in the morning instead of oatmeal!
Scrambled eggs are the perfect healthy, nutritious and protein-filled breakfast! I’ve found that if I start my day off with a meal that’s high in protein and fat, and a little lower in carbs, I’ve been having fewer cravings throughout the day. So definitely give this scrambled eggs recipe a try!
Recipe
Ingredients:
2 eggs (organic and pasture-raised eggs are best)
Kale
Grape tomatoes
Baby carrots
Beets
Avocado
Smoked salmon
Instructions:
Chop up the kale, tomatoes, and baby carrots
Add a little coconut oil to a pan, and add in your chopped veggies. Sauté them for a few minutes
Whisk 2 eggs together in a bowl, together with some salt & pepper. I also add a little water or egg whites to make the eggs fluffier!
Add the eggs to the pan, stirring frequently
When eggs are done, chop up the beets and avocado, and add them on top of the eggs
Top eggs with smoked salmon, some spices/seeds (paprika, nutritional yeast, hemp hearts, etc.), and enjoy!! 😊
