Zucchini Oatmeal

I’m not going to lie, I was always skeptical of this recipe whenever I would see it on my Instagram feed, but they say don’t knock it till you try...so I decided to finally try Zucchini Oats... and honestly, I loved it! Zucchini does a great job at bulking up the oatmeal while also adding in some extra nutrients! This is a great way of adding in some veggies into your sweet breakfast without even noticing it


Recipe

Ingredients:

  • 1/4 cup gluten-free oats

  • 1/2 cup milk (regular or dairy-free)

  • 1 small zucchini (grated)

  • A dash of cinnamon

  • 1 tsp maple syrup (I don’t normally add any sweetener into my breakfast oats but I found that the oats needed a little sweetening because of the zucchini)

Toppings:

  • Greek yogurt

  • Cacao nibs

  • Goji berries

  • Coconut flakes

  • Almonds

  • Flax seeds

Instructions:

  1. Add oats, grated zucchini, nut milk, and cinnamon into a pot. Bring to a boil then cover and simmer for about 5-10 minutes, until all the liquid is absorbed

  2. Transfer to a bowl, and stir in maple syrup and a little greek yogurt (for added creaminess and protein)

  3. Add all the toppings and enjoy!!
