I’m not going to lie, I was always skeptical of this recipe whenever I would see it on my Instagram feed, but they say don’t knock it till you try...so I decided to finally try Zucchini Oats... and honestly, I loved it! Zucchini does a great job at bulking up the oatmeal while also adding in some extra nutrients! This is a great way of adding in some veggies into your sweet breakfast without even noticing it
Recipe
Ingredients:
1/4 cup gluten-free oats
1/2 cup milk (regular or dairy-free)
1 small zucchini (grated)
A dash of cinnamon
1 tsp maple syrup (I don’t normally add any sweetener into my breakfast oats but I found that the oats needed a little sweetening because of the zucchini)
Toppings:
Greek yogurt
Cacao nibs
Goji berries
Coconut flakes
Almonds
Flax seeds
Instructions:
Add oats, grated zucchini, nut milk, and cinnamon into a pot. Bring to a boil then cover and simmer for about 5-10 minutes, until all the liquid is absorbed
Transfer to a bowl, and stir in maple syrup and a little greek yogurt (for added creaminess and protein)
Add all the toppings and enjoy!!
