Peanut Butter Oat Energy Bites

These energy bites are naturally sweetened using dates, the fruit of a date palm tree! On top of being delicious, they're also high in antioxidants (which help your body fight against free radicals), fiber (which helps slow the absorption of carbohydrates and regulates your digestion), and potassium (a mineral that's important in heart health & bone health)!
You know when that afternoon sweet tooth craving hits and you need a little sweet (and preferably healthy) pick me up? Well look no further, these lil energy bites are exactly what you're looking for! They're creamy, chocolatey, and delicious - not to mention gluten-free, refined sugar-free, vegan, and super simple to make!
Recipe
Servings: 16 energy bites
Ingredients:
10 medjool dates
1/2 cup natural peanut butter
1/4 cup flax seeds
1/2 cup oats
2 tbsp maple syrup
1 tbsp coconut oil
1 tbsp chia seeds
1/4 cup chocolate chips
Instructions:
Toss in the 10 dates into a processor (make sure to pit them if they're not pitted! )
Process them for about 30 seconds until they stick together
Transfer them to a big bowl, add the rest of the ingredients, and mix them all together really well!
Form into balls, and store them in the fridge! Happy snacking 😊
