5 Ingredient Healthy Banana Cookies

These cookies are a super healthy option for dessert and can even be eaten for breakfast because they don't contain any refined sugar! Refined sugar (aka. white sugar, cane sugar, brown sugar, etc.) causes a big spike in insulin after it's consumed. This spike in insulin later causes a crash, which is what leads to cravings and inadvertently, leads to eating more sugar. In addition, having an insulin roller coaster throughout the day has been shown to eventually make people more prone to developing insulin sensitivity - a precursor to diabetes. We want to try to keep our insulin levels as steady as possible throughout the day in order to prevent against these. These cookies are naturally sweetened with bananas (which don’t spike our blood sugar nearly as much because they’re a whole food source), so you can enjoy these guilt-free!
Did someone say 5 ingredient flourless, refined-sugar free, gluten-free, vegan cookies??? These cookies have been my go-to for so many years, as they’re absolutely delicious, really simple to make, and super healthy! Plus, they’re a great way to use up your brown bananas that are starting to go bad!
I will say one thing though, because they are flourless and they rely on the bananas for sweetness, they’re a lot more mushy than regular cookies are and don’t have the regular cookie consistency, but I personally LOVE them so I’d definitely say give them a try!!
Recipe
Ingredients:
2 ripe bananas
1 cup gluten-free oats
1/4 cup peanut butter or almond butter (I always recommend buying natural nut butter with no added oils)
1/4 cup chocolate chips
Dash of cinnamon
Instructions:
Preheat oven to 350 degrees
Mash up bananas
Add cinnamon, oats, peanut butter, and chocolate chip, and mix together
Shape into cookies (flatten them down into a cookie shape, don’t leave them as balls because they don’t rise)
Bake for 12 minutes, and enjoy! 😋
