Healthy Oatmeal Chocolate Chip Cookies

These healthy, paleo, and refined sugar-free oatmeal chocolate chip cookies are SO GOOD - they’re moist and chewy but still a little crunchy on the outside, and 100% taste better when consumed wearing fuzzy slippers.
Last night I couldn’t decide if I wanted regular chocolate chip cookies with almon flour or oatmeal chocolate chip cookies, so I used about half oats and half almond flour and the consistency turned out so good!! Safe to say I’ll be making these again hehe
Recipe
Ingredients:
1 egg
3 tbsp melted coconut oil
3 tbsp maple syrup (or 4 if you like sweeter!)
1/3 cup almond/cashew butter
1 tsp natural vanilla extract
1 tbsp unsweetened almond milk
3/4 cup organic rolled oats
3/4 almond flour
1/2 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/3 cup dark chocolate chunks/chips/cut up dark chocolate bar
Instructions:
Preheat oven to 350 F
In a large bowl, whisk the egg
Add the coconut oil, maple syrup, nut butter, vanilla extract, almond milk, and mix together
Mix in the almond flour and oats
Then mix in the cinnamon, baking soda, and salt
Fold in the chocolate chunks, and place on baking sheet! Makes about 16 small cookies
Bake in the oven for 12 minutes! Try not to eat them all at once 😉
