4 Ingredient Healthy Zucchini Fritters

Zucchinis are one of my favorite foods to include in my regular rotation of foods. They’re high in antioxidants, soluble & insoluble fiber, and vitamin A and vitamin C!

I always buy zucchinis from the farmer’s market and I wanted to try using them in a new way that wasn’t just grilling them on the BBQ - and my friend recommended I make zucchini fritters! And omg… after making these once, I want to make them all the time, they’re to DIE for! They’re so juicy and delicious, and took about 20 minutes to whip up! I’d also highly recommend topping them with sour cream because that really took them to the next level


Recipe

Servings: About 6-8 small fritters

Ingredients:

  • 3-4 shredded zucchinis

  • 2/3 all-purpose flour (I like Bob’d Red Mill paleo baking flour)

  • 2 tbsp olive oil

  • 2 eggs

Instructions:

  1. Grate your zucchini’s, then place into a strainer and leave them for a few minutes to strain the water out of them. Squeeze out as much water as you can using your hands. Transfer to a large bowl

  2. Add the flour, olive oil and eggs, and mix everything together

  3. Add some olive oil to a pan and turn on medium heat

  4. Grab mixture and make pancakes in the pan about 3 inches wide (or however big you want to make them)

  5. Leave them for a 2-3 minutes, then flip over once they’re golden brown

  6. Top with sour cream, serve, and enjoy! 😋
