3 Ingredient Pumpkin Soup

Eating healthy doesn’t have to be complicated or time consuming - it can truly be so quick & easy! This soup is a great example of how you can combine some simple ingredients in your house to make a quick, satiating, and delicious meal in no time!

Fall is in full swing and that means 2 things: all thing pumpkin, and warm foods! It’s been cooler and gloomy even here in California, and I was really craving soup! The best part about this soup is that it’s only 3 ingredients and took 10 minutes to make! And it’s soo creamy and delicious - make sure to give this a try next time you’re craving soup!


Recipe

Servings: 1 serving

Ingredients:

  • 1 can (15oz) of pumpkin

  • 1 cup coconut milk

  • 1 cup chicken broth (I love Kettle & Fire)

  • 1/4 tsp salt (*note: adjust salt based on taste, I ended up adding more salt than I thought I’d need)

  • sprinkle of black pepper

 Instructions:

  1. Add all the ingredients to a medium pot, turn it to medium heat, and stir

  2. It will take about 5-10 minutes to heat up, then you’re all done!

  3. Swirl in some extra coconut milk and enjoy 💛
