Chicken Patties (with liver)

Let’s talk about liver!!! Liver and other organ meats are one of the MOST nutrient dense and healthy things that we can eat! Nowadays eating organ meats isn’t as common as it used to be, and it may even be a disconcerting thought to some people. But our hunter gatherer ancestors ate not only the muscle meats that we eat today, but also organ meats!


Organ meats are much more nutrient-dense than muscle meats, and more so than most vegetables as well! They’re very rich in B vitamins, such as vitamin B12 and folate (which is a vitamin that a lot of people are deficient in), vitamin D, A, and they’re also rich in minerals such as iron, magnesium, potassium, selenium and calcium. Not only are they super healthy, but buying chicken livers is also surprisingly cheap!

Liver has a distinct taste, so if you’ve never had it before it might throw you off - so that’s why I made them into chicken patties! Mixed with ground chicken, these patties are super delicious and the taste of the liver is camouflaged by the ground chicken.

Recipe

Ingredients:

  • 1lb ground organic ground chicken

  • 1/2 lb organic chicken livers

  • 1 grated zucchini

  • 1/2 red onion

  • 2 minced garlic cloves

  • 2 organic grass-fed eggs

  • 1/2 tbsp Dijon mustard

  • Salt & pepper

Instructions:

  1. Preheat oven to 350F

  2. Mix all the ingredients together in a large bowl

  3. Using your hands, form into patties and place on a baking sheet.

  4. Bake for 40 minutes

  5. Eat with your favourite salad and enjoy! 💛
