Cream of Asparagus Soup

I highly recommend buying organic, grass-fed dairy (ie. butter and cream for this recipe) as it’s an extremely healthy source of fats! Conventional butter/cream that’s made with conventional milk can contain hormones and antibiotics that was fed to the cows, and pesticides that was sprayed on the grains that the cows are fed. It’s a good investment in your health!

Whether you’re like me and you don’t normally make soup, or if soup is your jaammm, you should definitely try this cream of asparagus soup!! It’s so simple to make, and so filling and delicious. This soup definitely made me want to step up my soup game and try some new recipes! 


Recipe

Ingredients:

  • 2 tbsp organic, grass-fed butter

  • 2 garlic cloves

  • 1 asparagus bunch

  • 3 cups organic chicken broth (I love @kettleandfire)

  • 1 cup organic, grass-fed half n half cream

  • Salt & black pepper

  • Fresh dill for garnish

Instructions:

  1. Trim the ends off the asparagus, and cut into 1” pieces

  2. Mince the garlic

  3. In a pot over medium heat, melt the butter. Then add the garlic cloves, and leave on for about 1 min

  4. Then add the asparagus, season it with salt&pepper, and leave for about 5 minutes until the asparagus turns golden brown

  5. Add the chicken broth, cover the pot, and let simmer for about 10 minutes

  6. Either use an immersion blender and blend the soup right in the pot, or if using a regular blender, transfer to the pot and blend until smooth (maybe take the lid off a few times in between to avoid overheating the soup)

  7. Return to the pot, stir in the cream, and warm over low heat

  8. Garnish with more cream and dill, and enjoy! 💚
