Nectarine and Feta Salad

All the ingredients I used for this salad were from my local farmers market - I’m a huge advocate for eating what’s in season and sourcing locally! Eating fruits and vegetables that are in season is actually the healthiest way for us to eat! Our bodies expect to digest foods grown in the same amount of UVB rays as what we’re exposed to in our outdoor environment. How cool is that! ☀️

Now that it’s hot outside I’ve been craving fresher foods like salads and bowls, and this fresh nectarine & feta salad topped with yogurt pesto dressing is perfect for summer! I paired this salad with baked chicken thighs and roasted potatoes and it was the perfect dinner.


Recipe

Ingredients:

  • romaine lettuce

  • cucumber

  • white nectarine

  • heirloom tomato

  • red onion

  • parsley

  • feta

  • hemp hearts

Dressing ingredients:

  • yogurt

  • pesto

  • honey

  • apple cider vinegar

 Instructions:

  1. In a large bowl, combine all the ingredients for the salad

  2. To make the dressing, simply combine yogurt, pesto, honey & apple cider vinegar in a small bowl, and adjust quantities based on consistency and taste! I never measure the quantities haha - if it needs to be a little more runny, add some ACV; if it needs to be less runny, add some more yogurt/pesto

  3. Toss the salad with the dressing and enjoy! 💛
