Steak & Sweet Potato Salad

I’ve been trying to incorporate more bitter foods into my diet in order to improve liver health and help its ability to detoxify our bodies of toxins. Examples of bitter foods in this salad are arugula, radicchio and lemon!

This sweet potato and steak salad is a great example of a super nourishing, delicious and filling meal, that’s also really easy to make. I love mixing and matching ingredients in the salads and bowls that I make so feel free to make any swaps with veggies that you have in your fridge!


Recipe

Ingredients:

  • arugula

  • radicchio

  • radishes

  • sweet potatoes (I bought a variety of different types)

  • olive oil (extra virgin cold pressed)

  • chickpeas (try to buy chickpeas that have as few added ingredients as possible and no sodium)

  • organic, grass-fed sirloin (steak is extremely healthy and nutritious when bought from the right source!) + organic butter to sear it in

  • sunflower seeds (make sure the only ingredients is just seeds, no oils)

  • balsamic vinegar

  • squeeze of lemon

Instructions:

  1. Preheat oven to 400F

  2. Chop up the sweet potatoes, place into a bowl, drizzle a little extra virgin olive oil on top, season with black pepper, salt, cinnamon and smoked paprika, and mix in the bowl with your hands. Place on a baking sheet

  3. Rinse the chickpeas thoroughly, place in bowl that you had your sweet potatoes so they get some of the residual oil left in the bowl, season with black pepper and smoked paprika, and mix in the bowl. Place on a baking sheet

  4. Put sweet potatoes in oven and leave for about 30-40 minutes (depending on how well done you like your potatoes - I personally like mine a little burnt hehe)

  5. Into a bowl, add base of arugula. Add chopped radicchio and radishes. Drizzle with balsamic vinegar

  6. In a pan, add organic butter. When pan is heated, cook your steak (about 8-15 minutes depending on how well done you like your steak - I’d recommend using a meat thermometer or cutting into it to see how cooked it is)

  7. Once everything is done, cut up your steak and add to the bowl, add in the sweet potatoes and chickpeas, and finish off with a sprinkle of sunflower seeds and a squeeze of lemon juice. Enjoy!! 💛
