Healthy Chocolate Chip Banana Muffins

If you haven’t noticed from my page yet, I love bananas! Not only are they a versatile cooking ingredient, but they’re also really healthy. They’re a great source of potassium (this one we all knew haha), as well as antioxidants, vitamin B6, vitamin C, and fiber!

These healthy muffins are the perfect afternoon snack, evening dessert, or even breakfast! Refined sugar-free and gluten-free, they use only natural sweeteners and won’t give you a huge sugar spike like other muffins. They’re also super moist and have more of a banana bread texture than a traditional muffin texture. Make this recipe the next time you have mushy bananas sitting on your counter!


Recipe

Ingredients:

  • 3 very ripe bananas

  • 6 tbsp melted butter (I recommend organic & grass-fed)

  • 1/2 tsp vanilla extract

  • 1 tsp cinnamon

  • 1 and 1/4 cups flour (both gluten-free or regular will work)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup coconut sugar

  • 1 egg

  • 1/4 cup chocolate chips (I recommend Hu Kitchen refined sugar free chocolate chips sweetened with dates)

 Instructions:

  1. Preheat oven to 350

  2. In a large bowl, mash the bananas with a fork

  3. Melt your butter, and let it cool for a minute

  4. The mix the flour, coconut sugar, cinnamon, baking powder, baking soda, and salt together

  5. Add in the melted butter, egg, and vanilla extract. Mix together well

  6. Finally mix in the chocolate chips

  7. Grease a muffin pan (can be done with oil or butter, or you can add muffin liners to your muffin tray)

  8. Pour into muffin pan, and bake for ~20 minutes (test to see if a toothpick comes out clean - if not leave for another minute or two)

  9. They’re so delicious eaten as is, or with a little butter on them! Enjoy 💛
