Healthy Pumpkin Banana Muffins

A great way to lower your body’s sugar spike is to eat less refined sugars (hence why these muffins are sweetened with bananas & coconut sugar). But did you also know that another great to do that is by including a healthy fat with your carbs? Pairing carbs with organic grass-fed butter helps lower your body’s blood sugar spike, so these muffins are the perfect pairing!

These pumpkin banana chocolate chip muffins are PERFECTION! They’re so deliciously fluffy, dense, and moist (sorry not sorry). They’re quick and easy to make, and are sweetened with bananas & coconut sugar (which has a lower glycemic index and is less refined than white sugar), so you can eat them and still feel happy after without the blood sugar crash 😊


Recipe

Ingredients:

  • 1/2 cup mashed bananas (I ended up using 1 and 1/2 bananas)

  • 1/2 cup + 1 tbsp pumpkin purée

  • 1/2 cup coconut sugar

  • 1 egg

  • 1/3 cup melted butter (~5 tbsp)

  • 1/2 vanilla extract

  • 1 tsp pumpkin spice blend

  • 1 cup + 2 tbsp flour (I love @jovialfoods einkhorn flour)

  • 3 tsp baking powder

  • 1/4 cup chocolate chips

 Instructions:

  1. Preheat oven to 350

  2. In a large bowl, mash the bananas, then mix in the pumpkin and suga

  3. Melt your butter, and let it cool for a minute

  4. Add in the butter, egg, vanilla extract, and pumpkin spice. Mix together

  5. Then add in the flour and baking powder. Mix together well

  6. Lastly, mix in the chocolate chips

  7. Grease a muffin pan, and pour batter into pan (mine made 9 muffins)

  8. Bake for 22-24 minutes (test to see if a toothpick comes out clean - if not leave for another minute or two). I baked mine for 24mins and they turned out perfect!

  9. Store these in a airtight container for a few days, and I’d highly recommend reheating for a few seconds and serving with raw butter 👌🏼 Enjoy!
