Crispy Chickpeas

Chickpeas are incredibly nutritious! They contain a good amount of plant-based protein, and a lot of dietary fibre. They also have a low glycemic index (unlike potato chips), meaning your body absorbs and digests them slowly, and they don’t spike your blood sugar levels. I also love making these at home because most of the snacks in store contain vegetable/seed oils, and at home I can ensure that I use healthy oils (like olive, coconut or avocado).

Recipe
Ingredients:
1 can chickpeas (try to buy organic chickpeas or to make sure that your canned chickpeas don’t contain Disodium EDTA)
1 tsp olive oil
1/2 tsp nutritional yeast
sprinkle of paprika
salt & pepper
Instructions:
Preheat oven to 400F
Wash and rinse chickpeas
Toss chickpeas in olive oil and spices, and mix them all together
Bake in the oven for 25 minutes! Happy snacking! 😊
